Will you be posting the fabulous, best ever recipe for the posole served at the Blue Corn Social? and the blue corn bread too?

Still wishing we could have attended. I've been at our hospital for different tests, every few days. Spent last night there having my sleep studied. Now, that's a calling! Watching a guy sleep. Then the tech tells me that for a fee, she won't put the video on YouTube. Still hoping for some relief in the form of better sleep.

Finally got back to the computer. Here is the recipe for the Blue Corn Posole.

Frist there are several places you can buy Dried Blue Corn Posole on the internet. salmanranch@nnmt.net, New Mexico Connection.com, chiliaddictstore.com.

Soak Blue corn over night in water. I use the microwave to cut soaking time down, so I can cook a pot in a day.

Put soaked posole in crock pot, fill 2/3 way with water or chicken broth. Cook until the posole is about tripled in size and is soft.

Cook 2 lbs. cubed pork. (any cut will do.) season with salt and pepper. Add 2 onions, I use large, and 2 large cloves of garlic diced to soften onions. When pork is just pink add to the Posole.

Simmer until flavors blend. Add 2 Tablespoons Mexican Oregano. If you cannot find Mexican Oregano, use the Italian. Add Salt and Pepper, to taste.

Here is your twist. Hot or not? I add green chili, the hot kind. If you do not like things spicey, still use the hot but add a couple tablespoons at a time. Are you a fan of red, that is good too! You can buy Hatch Green Chili, or Bueno Chili in the freezor sections of most grocery stores.

The longer it cookes, the better it tastes. Better yet cook it ahead of time, refrigerate or freeze and recook.

Jack, sorry you missed the party.  Did they feed you breakfast after you you got done being recorded?  Was it any good?  Glad you made it through the test.

No breakfast, but I did get a better mask that should help. As Rahm Emanuel would say, "Growing old is @#$@!$ #$#$@#$ @##$#@"

My mask leads sometimes and vibrates a lot making disgusting noises that fortunately I can blame on the dog.  It's it nice disgusting our disease on line?  John
